Critic's Notebook: What’s Your Flavor

While some restaurants, like Osteria, make phenomenal sausage in-house, other places know when to call in the experts. Pub & Kitchen brings in sausage from Martin’s Quality Meats & Sausage in Reading Terminal Market for its excellent sausage sandwich. Fortunately, unlike so many of the ingredients chefs have access to that we humble home cooks can’t get our hands on, Martin’s sausage is readily available to all Philly cooks. With a dozen varieties sold out of their market stall, I always seem to choose the Italian sausage with sautéed onions and peppers inside. (This flavor is terrific on sandwiches and also makes a great, all-in-one pizza topping.) P&K’s chef Jonathan McDonald likes the equally tasty garlic sausage. Martin’s fans: What’s your flavor?
