He toys with science (charcoal sauce on abalone) but never loses focus on the clientele; diners also have the option of exquisitely prepared, accessible dishes like scallops with sun-dried tomato jam. Best, the tasting menu ($79-$85) has no rules; anyone or everyone, three, four or five courses.
